Chipped Beef?! (SOS)

For dinner tonight I want to make something that reminds me of my mom. I love her and I'm missing her. So I went and got the ingredients for SOS/Chipped beef on toast/shingle, and am in the process of learning how to cook. The roux that I need to make, (for cooking the flour/butter) is something I'm a bit timid on trying. I found a link for a microwaved version. Is this safe? Should I try and make it on the stovetop? I have issues with it so the microwave is easiest.
