I am really trying to get the hang of stainless steel. Using the water test was a very useful thing for me to start getting things going at the right time.
At this point what I do is once it passes water test, I put on a drop of water and my chicken.
However, as the chicken is cooking, is there a good way to tell if the pan has gotten “too hot “in which case the nonstick properties are no longer working?
Is the water test sufficient here or is that not gonna work now that the pan has oil in it? Are there any other signs I can look for other than just “is it burning”
