As I'm learning to cook in my midlife, one of the meals I've gravitated towards is just heating up a skillet with some extra virgin olive oil and a little low sodium soy sauce and sautéing some cubed chicken breast along with sliced zucchini and serving it over a bed of steamed basmati rice.
Is this a meal I can reliably come back to every day? I have ADHD and so I tend to fixate on different things like meals and such and if I can find something 1) healthy and 2) that I like, it's highly possible I can latch onto it. Just trying to figure out how to hack my brain and still eat well.
I guess my biggest concern is the low sodium soy sauce. Is it okay to add this to the EVOO to sauté my chicken and zucchini in?
