So I recently heard about Tortang Talong from TikTok. I love eggs, rice and eggplant but unfortunately I don’t get paid until next week so I can’t go get an eggplant. I opted to use a Poblano pepper I had laying on the counter. I charred the peppers until the were almost all black and put them in a zip log bag. I then cooked down some red onions and Garlic with a pinch of salt until they started to crisp up a bit. I took those off and put them aside as I warmed up the pan for the eggs. I shocked the eggs with some salt and pepper and mashed up the Poblano but kept the seeds and kept the tact. I than threw it in the pan on Medium High to get it crispy and flipped and plated it over rice.
I just found this Subreddit so idk if this is the place to post this but can anyone tell me how to make it more spicy? I kept the seeds in and even added some Pato Sauce on top to add some heat but it just wasn’t working. Any help please is appreciated!
