How do you store your juices/purees?

Not sure if this is the right sub for this, but given that I juiced/pureed some fruits for the purpose of using them in cocktails, I figured I'd ask here.

Over the weekend, I had some friends come over so in preparation for that, I pureed some passion fruit and juiced some lemons and limes. I stored the juice/purees in some old bottles I had and then stored them in the fridge over night, but not before making a few cocktails with the fresh puree/juice first.

My first drinks were great-- the pornstar martini in particular had a really nice clean layer of drink and foam, so I was really proud of that. However, when I tried making drinks again the next day with my refrigerated puree and juices, I guess something changed: my pornstar, for example, looked like a blended drink and and was all the same color.

What gives? How can I properly store my fresh juices/purees? My guess might be my fridge might be too cold. Anyone have any tips?
