I Don't Understand Shutter Angle

I'm using a Panasonic GH5, and previously just followed a YouTube video on settings for Cinematic 24FPS. Now I'm trying out 60FPS/120VFR and not sure if I should keep 180 or go higher. I'd like crisp footage without blue but haven't found a good resource to explain the differences in angle...should I go higher? Lower? What if I'm planning to put it on a 29.97 FPS timeline?
