When do I pick wax gourd and how to prepare? My neighbors garden is growing over my wall but they don’t want what was produced over here and I don’t want to waste free food! Tips? tricks?

Our neighbors are Vietnamese and have an incredible garden. Growing over and onto my side of the fence are wax gourds and green plums. I asked if they would like for me to pick them and bring it to them, and they said no so I’m planning to try and prepare some of this free food! I’m making plum wine with the plums but have no idea what to do with the gourds or when to pick them. The plant is still flowering but some of the first fruit became huge within just a few days!! (First pic is today, second is two days ago!)
