I (black) didn’t see the check and continued for 14 more moves. I keep missing these checks, any advice to get better on seeing them? Is it as simple as slowing down?

Pattern recognition. Maybe you have a hard time with visualisizing the range of a knight, but this one should be obvious immediately, to be honest.
Would you still not have noticed it if instead of the g4 knight you had a bishop on h4, or if your f7 pawn just wasn’t there? If these seem easier, you know what you should train.

This. I’m not a high rated player shitting on a lower one either, basically just a very casual player that mainly passes time on flights playing offline chess vs a bot, lol.
Neither of these matter in delivering check. It’s a pretty strange thought process that may be good to develop if it literally prevents you from seeing this basic pattern that others can see in a split second.
