I was reading about the components of a Mueller-Hinton Agar in the context of the Kirby-Bauer Method. One of the components is starch. It says that the starch forms a colloid, which is expected. But then it also says that the starch can absorb toxins and metabolites (that can interact with the antibiotic) . How does it do that?
I know that starch absorbs iodine by having the iodide ions intercalate within the amylose helices. Does the same happen with other compounds? What allows the absorption, differences in charge/polarity?
