I noticed that I can buy powdered citric acid for use in cooking (and it appears to be actual powdered citric acid and not some salt made with citric acid). However, when I try to buy powdered acetic acid, it looks like you can't really buy it for home cooking use / it is way more dangerous than powdered citric acid. I see some powdered vinegars are made with maltodextrin and vinegar (which I assume they dry after mixing).
Is powdered acetic acid possible to make just like powdered citric acid? Is one more dangerous than the other for some reason? Why do manufactors go through all the effort to make sodium diacetate for salt and vinegar potato chips if they could potentially just use powdered acetic acid?
