Vacation with cat...take her in an rv? Leave her at home?

We are in the U.S. and are planning a trip in November. We have a scaredy cat who is 2 years old. We hand raised her from birth and she is afraid of loud noises. I can't sneeze without her meowing at me... We did travel to Florida a year ago with her and it wasn't good for her. She didn't eat, drink or use her litter box until we reached a hotel room 8 hours later. After that, we were at my mom's and the cat relaxed.

This time however, we will be stopping and going all the time. 14 days of seeing the sights all over the southwest. Could we leave her in the vehicle? Do we get an rv? Do we bring her into a hotel room every night? Leave her in the minivan?

Then there's the flip side. Do we leave her at home? She has never been separated from us overnight, except when she had her spay surgery. We have several trustworthy friends who have offered to watch her. Domino isn't friendly to anyone but us and they know that.

So, cat people of Reddit....please help me, I'm going crazy trying to figure this out.
