Atmospheric change causing rust?

Recently moved to Colorado and all of my cast iron is spot rusted after taking them out of storage. Maybe my mistake was using shortening to cure them (southern wisdom might be an old wife's tale).
Tldr: what should I use to reset rusty cast iron?
