I was preheating my pan and it was taking forever. so I was looking at stuff on my phone and ignoring the pan. Looked over it is is smoking like crazy.
Did I grab the lid and put it on it and shut off the burner and move the pan away from the heat?
Nope.
I grabbed the bowl of diced chicken breast I was heating the pan to cook and dumped it into the pan. it slid all over the pan without sticking!!!!! I now know why my stir fries never cooked right. I did not have my pan hot enough. The dish turned out amazing.
So moral of story: Patience grasshopper! and if doing stir fry, get the pan hotter!
