Lots of flaking/pitting
Post Body

I’ve had this pan for well over a decade. Unfortunately I never got the memo that you’re not supposed to use high heat with cast iron, and I regularly crank it as high as it will go, especially when drying it after washing. I assume that probably accounts for all of the pitting/flaking you see and why I’ve never gotten that nice shiny surface I see in so many photos here.

I guess my question would be if I do want that nice smooth, shiny surface should I strip and start over, or if moving forward if I stop cranking the heat so high will it eventually fix itself?
