Looking for some encouragement and motivation

I’ve struggled with weight loss, as well as high anxiety that causes me to feel sick to my stomach, gout, really bad acid reflux, tired all the time, especially crashing in the middle of the afternoon. I have sleep apnea as well and inflammation and joint pain. I’m 35, and I saw all the benefits that carnivore offered. I started at the beginning of November last year and was really strict on it for 2 weeks. During that time I was having a gout flare up and it completely went away, I stopped taking the medication my dr. prescribed for my gout and I lost 15lbs in that two weeks as well. I was feeling amazing, felt like my anxiety went down and had more energy, though I did feel like I was still crashing in the middle of the afternoon, like extremely tired. Anyways, I ended up going off the diet for Thanksgiving and I had an immediate reaction when I was eating carbs and other standard Thanksgiving food, like I immediately felt like vomiting. But since then it’s been a big struggle to get back into it. I’ll start the week out great but then give in and have food I would normally eat before carnivore. I’m looking for some motivation, tips and maybe some guidance to get back into it and actually be consistent. I don’t want this to just be a fad I go through for 90 days and then stop, I’m looking for a full lifestyle change to carnivore. I find I mostly go off when I don’t feel like cooking at just order delivery for quick and easy. When I get cravings I’ve tried to have chomps or some kind of jerky but I find I’m just not into it and crave variety and something to dip it in. Anyways, long rant.

TLDR: started carnivore, saw some great results but now struggling to stay consistent and get back into it. Looking for tips, advice, and maybe an accountability partner to help me push through.
