How do I even get started on a new career path?

I'm 30, and right now I work as a receptionist, but I'd really like to go to school and get a degree. I have no idea what I should even go for. I was a vet tech for 7 years and I loved it, but it's not a very good long term career where I'm from.
Any advice guys?
