How would you go about making the most of an HR apprenticeship at a company going through an acquisition?

I have been at said company for 2 years in customer service and have been offered the opportunity to be an “intern” in the HR department to eventually make a career change.
What are some things I should ask to participate in? What’s the best way to make the most of this? Right now they’re having me focus on onboarding but I want to obviously dip my toes in other areas!
