Toronto to Vancouver

Moving to Canada in April on the working holiday visa, I want to settle in Vancouver but I'm going to start in Toronto and make my way over. I'll be in absolutely no rush and want to see the best of Canada, I've done a fair bit of research so far but are there any must do's or hidden gems that you would recommend? Can be anything from wildlife spots to restaurants to events or anything else - any replies are much appreciated!

Going through the prairies consider going through the south side of Saskatchewan instead of the Number 1. It’s designed to get you through but not really sight see.

Moose Jaw has the “Tunnels” used by Chicago organized crime to smuggle alcohol.

Saskatchewan things to see: Big Muddy, Grasslands National Park, Cypress Hills Interprovincial Park (then cross over to the Alberta side of road conditions permit)

Manitoba: The Legislative building is very unique and interesting, especially if you take the Hermetic Tour (privately run). It goes into all the strange esoteric and mythical features of the building.

The Mint is also interesting. We print the currency of many countries there such as Australia, Brazil, India, Israel and over 70 others.
