Coolant bubbling but engine not over heating? Please help

Bought this Camaro literally yesterday at 50k miles and I look under the hood today to see my coolant almost empty. I refilled it about half and it’s back down and bubbling. Anyone know why this is happening? The engine is running a consistent 200-206 degrees even on longer trips. Any advice would be appreciated greatly
