Why are cabin crew on US based airlines so "mature" on long haul flights?

I just flew to Rome from the east coast on a US based airline. The average age of the cabin crew had to be over 55-60. They were not pleasant in the slightest, every interaction seemed to be accompanied by a hidden eye roll. On foreign (specifically those based in Asia) airlines you don't have this. What's the deal? I mean if you have to evacuate a plane under duress, it would seem to me that youth and physical stamina/strength would be huge assets over someone who clearly is older AND never exercises.
