Hi there. Can anyone expplain what the heck the wifi adapter on Asrock Z590i-itx is conneced via PCIe 2.0. I.e. why the max link speed is 5Gt/s rather than 8Gt/s?

As per Z590 block diagram there's no PCIe 2.0 at all. All PCH lanes are v3.0.

However, there's a dedicated block on the diagram for CNVio Wifi interface. And all bundled wifi adapters IMO are CNVio these days. But my understanding that they are still logically wired to one of the PCIx lanes.
As a side note - this somewhat confirms that Wifi 1300 Mbps speed on this mobo is just a joke - a marketing mockup. It can't get more than 500Mb of throughput due to the bus speed limitation.
(and the same is true for 2.5G network adapter, which is also wired to an x1 5Gt/s lane.
