About to start buying, one final check before I hit purchase

As the title says, I'm about to start buying parts for my first build. One specific question I have is if the CPU/GPU combo with bottleneck one or the other. I'm planning on stepping up the 2070S to the 3070 when it's available. If there will be a bottleneck, which CPU/GPU combo would you recommend?
I also just wanna make sure everything is ok and I haven't missed anything blatantly obvious
