What do I do with two SSD's? - M.2 vs SATA help!

I've used a TC Sunbow SSD since my first build about 8 months ago. I recently obtained a TeamGroup M.2 card, which I don't really know too much about. From what I've gathered about this M.2 card is that it's quite faster than the TC Sunbow I have. So with that being said, should I put them both to use in one build? I've heard that some people use one SSD to have their copy of Windows 10 on, and then have another SSD to store everything else on. What are the differences between the two connections (SATA vs. M.2 [NVMe PCIe]). What is the most effective way to use these two SSD's in the same build? Should I even do it at all? Also, something to note: I have my own copy of Windows 10 on the TC Sunbow, and there is another brand new copy of Windows 10 on the M.2 card. Thanks for your time and help!
