Upgrade to a new Single GPU or to a Dual GPU set up?

As the tittle says, I am in the market for a video card upgrade.

Currently I am running a Radeon HD 7950 in my gaming rig.

Would it be better to get a second HD 7950 or should I just sell my current card and upgrade to a GTX 1080 or something similar?

This is primarily a gaming rig in which I use two monitors.

As far as other things go. I have an aftermarket cooler for the CPU which is an i5-7500k. It also has a 650w power supply and 16gb decent RAM. The motherboard and case has space for two cards if I go that route.
