Hi everyone, I'd like to some help to give this a final one over before I go ahead and put in the order for this build. Would really appreciate it.

What is your intended use for this build? The more details the better.
Gaming, general use, plex server, coding. Multitasking! I'll probably keep this thing running all day, so power usage and sound also matter a little to me.
If gaming, what kind of performance are you looking for? (Screen resolution, FPS, game settings)
Currently use 2 1080p monitors, so being able to multitask would be nice. I'm currently using a 5 yr old mid-range laptop so just about anything will be a nice upgrade.
What is your budget (ballpark is okay)?
Hoping to keep it around 1.5k USD tops, but it's more important to be cost efficient. I'm located in Taiwan so prices are a little different here. So are the parts available.
In what country are you purchasing your parts?
Taiwan. The vendor I'll be ordering from http://coolpc.com.tw/evaluate.php is famous for having fair prices and quality without need for haggling. Unfortunately in Taiwan GPUs are a little more expensive, and certain products (like Samsung SSDs) aren't available.

Decision-making logic:
PCPartsPicker didn't have the Seasonic G-650W, so I picked a substitute to finish the build. I know I don't need 650W, but the price difference is really minimal.
I wanted to give MSI a shot, as EVGA doesn't have a superior customer service presence here unlike the US. I've been an Asus customer in the past and my experience has been pretty average, I also anecdotally have a friend working in their R&D lab who constantly rips on their own products.
Originally, I was shooting for a GTX 1070, but I've been told that would be a waste with a 1080p monitor. So I switched the build to a GTX 1060 and picked an i7 cpu instead of an i5.
Optical drive can be whatever, I'm getting one for legacy reasons. I really like the R5 for the filter design over the R4 which would otherwise be cheaper. Unfortunately the vendor only has the windowed version in stock it seems.
At this point I'm wondering if I should buy an extra case fan or two, and if I should replace the stock CPU cooler?
