How to wipe 2 old harddrives

My dads old rig died and I salvaged 2 harddrives from it. One 750gb and 1 500 gb. I plan on building a PC this summer and i'd like to reuse them. But my dad had files on there that I don't necessarily want. Too many of which that I would just like to completely wipe both harddrives. I just have no idea how to do so.

Also I just have a few questions, It originally had Windows XP on them and he pirated windows 7 onto it. If I wipe them will it wipe the OS completely? I want to upgrade it to windows 7 or 8 legitimately.
