I need some advice on a new build is the 5800x still worth it for £200? gamedev, blender, light vdeo editing etc.

I haven't been keeping track of PC's parts for a few years so I'm not really sure whats good anymore so I need some assistance if possible thanks!. I will be developing games with Unity and potentially unreal engine 5, I will need to use blender and light video editing, rendering animations, coding and playing some games on it. I have a 1080p 60hz monitor and a 1440p 75hz monitor. (plan to upgrade monitors in the future so recommendations are always welcome and I'd be willing to spend up to £500 but not really that bothered at the moment.)

https://uk.pcpartpicker.com/list/6kZn9c original build in 2017 which will be reupurposed as a server for hosting servers for games like Beamng, minecraft etc for my friends and if you are wondering why there is a 22tb HDD, I received it for free from a friend. (the GTX 1060 has been sold roughly a year ago)

https://uk.pcpartpicker.com/list/8CQjRK new build I'm thinking about and I have a budget of £1000 and I'd say my sweet spot on the price would be £500-£700, I've also already bought the RTX 4060 since my main device at the moment which is a laptop is falling apart so I will be going back to my original build that I made in 2017 for the time being.

Amazon currently has the 5800X for £200 so I'm considering using that for the CPU since its half the price but I'm not sure whats "the best" anymore which is why I'm posting here to help redo the new build entirely if its not good or if there are better alternatives.

I would also like to have a 5ghz wifi and a bluetooth adapter on the motherboard(I will most likely not use the wifi much but I'd like to have it just incase I do need to switch to it and the bluetooth I'd use 100%)
