Best GPU for my build?

I'm building a gaming pc, unsure of which GPU to go with. I don't have a huge budget, so I was looking at a Nvidia 2080 ti or 3070 ti, or the Radeon equivalents (I don't know Radeon GPU's).

Games I will be playing are GTA, Sons of the forest, DayZ, Starfield. Which i would like to play on ultra/high settings.

I have listed below Motherboard, CPU & monitor.

Motherboard: ROG Strix X570-F

CPU: Ryzen 7 5800X (To be overclocked)

Monitor: Razer Raptor 165hz 1440p

I want to play at 1440p and have over 120fps, the higher the better.

What GPU would you recommend? Open to Nvidia or Radeon, looking to spend up to £400, ideally £250 - £300 if i can find used.
