Upgrading, stuck on CPU

So I have many parts that I picked out that I am currently all set with aside from the CPU, I've been reading into 13th Gen and originally was going to pick up a 13700K but all of the power consumption and stock settings thermals 95c to 100c while gaming and benchmarking has made me think otherwise, I was looking into a 12900K or a 13900 non K as well.

I am not tech savy enough to trust myself installing the TG contact frame to mess up and also voiding the warranty, this is my only system as well.

I read into undervolting, I currently have an MSI z690 board and I know that the LL settings make it easy to undervolt but I am worried that won't be enough to cool down the super power hungry 13700K, I have a Corsair 360mm ELITE LCD AIO as well.

I am stuck and I don't know what to choose at this point, I was curious if 13900 non K would be worth enough if all I am doing is gaming/streaming and occasional content creation/video editing etc.
