I love how annoyed Gus gets with Hank.

Gus: "He approached me for a... vague investment opportunity."
Hank: "So after years of no contact he invited you to dinner?"
Gus: "He wanted money."
Like he has to break the flow of the story to clarify cause although Hank may be as dumb as a box of rocks sometimes he can also poke holes in a story like no tomorrow. Not even mentioning the "Is Gustavo Fring your real name?" that was so out of left field he was left flabbergasted.

It's an easy way to filter the dirty money and mix it with the clean. Pollos is probably owned by a holding company with Madrigal's other restaurant interests, and Madrigal owns the holding company itself. It would be unusual for there to be a direct pathway from a regional US southwest chicken restaurant chain and a massive multinational corporation.
