another solar post, but this time - limited use

We live and travel in our RV full time (30' tow) and so far have not spent more than a night that was not connected. But in a month we will be sitting still for 5 days without hook ups.

I'm trying to determine a solar solution for short boondocking situations like this. I assume it would be a couple of fold up solar panels and something they would plug into to capture a charge? I'm guessing enough energy to charge a phone, run a fan, make coffee is pretty much all I'm aiming at. Expandable would be cool.

Any thoughts/experience to share?

I'm not worried about water/waste, that part I've figured out.
