What GSM paper do you guys use?

I'm about to buy some paper for bookbinding and would love to know what GSM paper you guys recommend for Diaries and other books in general. I want to make my favourite textbooks with a custom cover, but I'm a bit stuck on the paper. 125gsm? Is 170gsm too much? Perhaps 200gsm is better? What are your preferences?
