i planted these perennial herbs together at the beginning of summer, purchased from a garden center. both have been growing a lot, and i have cut them both back a lot. i have some questions about turning them into nicer looking bonsai

first photos of them filling up the pot are from the end of summer, and the newer photos of them trimmed down into a tree like shape are from today. i have cut them back quite a bit. the golden lemon thyme is currently doing amazing indoors under my high spectrum LEDS, with lots of new growth and the woody stems are becoming noticeably thicker every month it seems. However , the prostratus rosemary does not seem to be growing very fast at all, though healthy. Any ideas? Could it need a repot? The soil i am using as well isn’t proper bonsai soil, it’s just a regular outdoor potted plant mix. I do find that although the pot has a large number of drainage holes, every time i water the water doesn’t leak out of the bottom of the pot like i think i should. because of this, i have been holding off on watering it. the soil can stay moist like this for up to a week or two, which worries me very much that i could eventually have problems with root rot. I am also wondering how i would be able to start thickening the trunk, and if anyone has any ideas on styling for these trees? how should i wire, should i do a major chop, etc. Thanks!
