I have some questions about turning this lovely Heavenly Bamboo shrub into a bonsai tree !

Got this plant about a month ago from the sheltered but colder section of a gardening centre nursery, without giving it time to acclimate into my LEDs (i know i risked temp shocking it from outside to room temperature, i just tried not to think about it lol, i kept it very far away from the leds for about a week after the harsh pruning so as to give it some light but not much, i wanted to see if it would recover. About a WEEK ago, OVERNIGHT, the plant budded about four or five brand new stems about 3-4 inches long, and i immediately put it back up closer to the lights. I’m not sure what soil the nursery used for it but i’ve been having really good luck as the pot drains very freely, even if i water a small amount at least a little bit of water drips out of the drainage holes. in addition, the soil is drying out quite quickly, at a pace with how fast the darn thing is growing. i’m very happy it survived, because i want to bonsai it. I know that this species is not suitable for smaller bonsai thanks to the big leaves, and right now i am not happy at all with the shape of the trunk of the tree. im thinking about letting the tree reach only about 3 feet in height, with a decent sized pot to allow room for lots of growth. i really gave this plant an extremely brutal pruning (you can see in the last photo) and pushed it to it’s furthest of limits, so i’m extremely surprised and excited to see how extensive of a beating it could take. I feel like it could allow for alot of experimentation. However, I have a couple questions: 1. regarding the future styling of the tree, i am really unhappy with the ugly, thin and beat up looking single trunk. Is there any way I will be able to encourage a new main stem to form rather than the tree continuing up in a straight line? also, the branches seem to be unsuitable for bending and wiring and pruning the thing is kind of like trying to pluck your eyebrows, if you accidentally remove the wrong branch you may end you looking constantly surprised for a couple months.
2. should i move it outdoors even though there are still possibilities of seriously strong arctic winds and a possibility of more frost? It’s doing great under the LEDs so i don’t see why i should, but i ask because the nursery i bought it from had it in a sheltered sunny spot outdoors in borderline freezing temperatures. 3. should i repot ASAP or in the spring, and with a standard bonsai soil (akadama, pumice, lava rock, pine bark, vermiculite) or do you think the tree will appreciate a specific soil mix? thank you for the help in advance 💗. The last photos are examples of some heavenly bamboo bonsai and are not mine, reverse image search in google to find them (that is where i found them)
