Unsure on some things for Kayak build

Hey folks looking to build my first kayak using stitch and glue construction. Building a Laker 13 (13 foot kayak) using free plans from Jem Watercraft. I’m confident when it comes to the woodworking however lack experience with epoxy resin. I want to do it as cheap as possible so I’m going to use fibreglass tape instead of cloth. I’m just going to tape all the seams and then add a layer of epoxy over the plywood instead of glassing the entire hull and deck. I want to know if that would be sufficient strength-wise? (kayak won’t be used a crazy amount) Also I’m wondering if I do this how many layers of epoxy should I put on the plywood? And whether or not 6kg of epoxy resin and hardener will be enough?
