Rules clarification wanted

We played a game last night, and I have some rules questions. I can't be bothered to go check the rule book, so I figured I'd ask here instead.
When playing X, can I choose to play an O instead on my turn?
Can I just erase my opponents O and play an X on top in order to prevent him getting three in a row?
Can I play more than one X on a turn? This would really help me win.
