Evolution series: thoughts?

Hey all. I was recently at a board game cafe and saw the game evolution. I passed, because my friend has it and I’d rather play things I don’t have access to while I’m out.
Then, when I went to his house, I realized he has Evolution: beginning. Not the original game. This took me down the rabbit hole of seeing all the different variations that I just learned existed.
Anyone play a few of them? Which one has the best game mechanic? How different are they, really?
