Question about Expedition encounters in Eldritch Horror

I previously asked about two players with Eldritch Horror and while it seems a little more challenging than four, my wife and I prefer to play with just one investigator each.

That being said, we never seem to have time to have Expedition encounters. We literally only have had one in four games and that was going out of the way to encounter it because we were about to lose.

My question is: should we go out of our way to encounter them? What are they even for? We decided against reading some of the cards because we didn't want to spoil anything. But at the same time, we want to know if we should even make an effort to have those encounters or not.
