I wasn't sure if I have the best interpretation of the scene, so I figured I'd post it here;

She obviously makes the risky decision for K to delete her from the console. As much as she loves K, she can't bear the thought of anyone getting a hold of her memories. It's a huge consequence, but to Joi, that risk is part of a normal person's life and feeling like a real girl is worth the price.

It seems to me like a decision she makes on her own accord, as oppose to the decisions she's made just to please K. Not in a selfish way or anything, but a decision that shows she's a lot more layered.

There's no way to bring her persona back, nor any way for Wallace to track her. If it escaped anyone as to why there isn't any way of reviving her or tracing her, it's because it's not normal at all.

She effectively divorced herself from the Wallace Mainframe and that was her creator. That isn't programmed into their "product."
