What role do races play?

Weird question here, but what's the actual difference between different races other than they look different?
I've done every quest, visited every town and tried to find some sort of a cultral identity within the dialogues of different characters and came to the conclusion that if you replace any character with a character of a different race, it wouldnt make a single difference.
Am I the only one thinking this?
