This is just an observation of seeing many ask about spots, off-coloring, etc.
Many tend to over-complicate griddles.
Does food stick? If it does, use more oil and possibly re-season. (Bacon is not the cure-all however.) If not…don’t worry about things. If it doesn’t, ask nothing else but suggestions of things to cook.
If you see flaking, it’s seasoning pulling off. Clean it, re-season. Easy peasy.
Clean them. Every time. Scrape it…lightly. Think about brushing your teeth.
In the weather…it’s best to keep them covered and not letting water pool on the griddle. Even a good oil job isn’t perfect. You will get rust if you do this. And if you do, it’s not the end of the world. Just some elbow grease.
Buy the big one.
Remember…you are cooking on it. It doesn’t have to be ‘pretty.’ Don’t worry if the color seems ‘off.’ Does it do what it’s supposed to do?
