Question about polishing.

So in almost every bladesmith video I’ve seen, smiths will polish the black away from the knife to get the steel to show. While I’ve only forged a few knives (and nothing decent yet at that lol), I was wondering if grinding the black coating away after the quench is really mandatory, or if it’s just something done to make the knife look nicer and cleaner afterwards? If there any demerit to leaving it on and only grinding/polishing the bevel of the blade?
