Vintage bike restore - wheelset CONFUSION, help!

Hey all.

I picked up a vintage track bicycle (probably 80s) that I was hoping to convert to a single speed/fixed gear using a flip flop hub. My front wheel had a bit of a wobble (side to side) so I brought it into my local bike store to see what their suggestions were.

The front rim is pretty banged up and probably needs replacing, so was thinking of replacing the rear as well. Currently, it is a 650c wheelset. The rear is a single speed with coaster brake.

Here is my dilemma and confusion. The shop guys suggested I should just upgrade to a 700c wheelset since fixed wheelsets are more common with 700c sizing. This would mean new front/rear wheelset, tires, and new front brake. A little more than I was hoping to spend for this project but still doable. Looking online and calling around, it looks like all the rear hub spacings (OLD?) are 120mm. I measured the spacing on my frame and it is 110mm, which I guess was common with older track frames?

Surely there's no way to retrofit a 120mm spacing hub onto a 110mm width frame without cold setting the frame right? The shop didn't measure the frame width, am I just overthinking this or did they not think about that?

What are my options? Any info is kindly appreciated.. All these different sizing and sizing systems from different eras has me all confused lol. Thanks guys!
