Beginner gear advice in Europe

I've finally sat down an wanted to shop for gear for my trip that is planned my masters. The only thing I have is a bike. But I'm seriously overwhelmed by the options and many guides/recommendations (e.g. https://bikepacking.com/plan/tips/guide-to-bikepacking-bags/) are from an US centric view. The recommended options are significantly more expensive in Europe/Germany.

As of now, the first things I need are bags and a sleeping system. But I'm also welcome to any recommendations of small things that you don't want to miss out on your travels.

As an expensive option, I've looked into the Apidura expedition series for bags and a Big Agnes Copper Spur HV UL 1 for a tent. No idea about a down bag and a sleeping mat though. I'm rather tall (188cm, 6'2"), so I have to keep that in mind.

But to be honest I would love to spent less money on those things, I don't mind a few grams more (Christmas has left me with a few pounds more anyways). Any recommendations?
