Do non-picky babies become picky toddlers?

Our 8 month old baby currently eats anything and everything he can get his gums on. It makes me wonder though, if even though he's not picky about foods right now, can he become picky later on? I know all babies are different, but just curious to hear from parents with older kids about how they ate as babies vs now.
