Any gun experts out there that can explain the Lebel Model 1886?

So when reloading the 1886 it's seems like a typical self loading rifle putting in one bullet in at a time yet the last bullet your character reaches back into the loading area (sorry if incorrect term) as if it's adding another bullet even though your full. Your character will then pull the bolt back as normal but then pull it again although the second time you pull it back and cross it to the left and push forward.

Just curious why this gun has that little animation and what that does and means in real life.
