I've been hosting trivia for the last few years in bars that I've worked in and it not only pays for itself, but has increased sales dramatically.
Trivia can be done one of a few ways;
1) trivia from a box. There are a few companies that you can purchase trivia from. Typically it costs anywhere from $50-$100 per night for the trivia packages but it's easy and ready to go. These are often a multi week package, which accumulates scores to help keep teams coming back week after week. Other than the cost of the trivia, usually prizing, paying a host and equipment costs are the primary expenses. With myself, I've seen the average costs of this be $200-$300 per night in expenses.
2) Theme Nights. Simpsons. 90s. Music. Seinfeld. Game of Throws. You can generate the trivia yourself with a few hours of online research and get hardcore fans that will come out for the night to a place they may have never visited before. Costs tend to be cheaper if you do it yourself, but there is definitely increased costs in hours to make it happen.
Good specials to encourage groups: Platter and Pitcher specials.
Good prizes: Gift certificates.
