I am a part of a restaurant open for a luxury casual spot. The average check per guest is $100. Last night (Thursday, Halloween evening) was slow and my sales were $2700 between 5-9 pm - with about $500 in tips, which seems great, but after tipout the bartenders each make $118. (3 bartenders and food sales were 1800). If I was a server, Iโd have made a little more than double in take home tips, but the tipout still feels outrageous. After server tipouts, we each made about $190. (The bartenders all arrive at 1 pm to prep drinks and syrups and setup the bar, so my shift after closing was 9.5 hours yesterday).
Given that we work harder and longer than the servers, is it fair to request their tipout be 10% of bev sales? I donโt want to take away more tips from them, but the drink runners, after everything is split, are getting around the same average tipout as the bartenders.

Orrr my favorite less bartenders. I rather get rocked solo w no tables then split my hard work
