My progress so far, needs a lot more work before I'm satisfied though!
I can't do the designs with jug wiggling as easily as the designs with stacking yet (with room for improvement for both) but I've been practicing with a matcha base. (see photos) I can even do it with oat milk recently.
For some reason, none of this carries over when I try to pour on espresso. The owner and morning shift usually dials in for the day, though I don't think they even do it daily. My previous cafe used to dial in daily, sometimes twice if needed and they're generally more knowledgeable about coffee than the new shop I work at now.
Are there different adjustments I should be making with pouring/steaming milk for espresso vs. matcha? I used to be able to pour on espresso okay so I'm not sure if it'll click again the more I practice...
