Shower thought: Why don't festivals/clubs use those big carnival slushy machines?

Problem: Barmen & organizers are not fond of people who don't order drinks. This leads to draconian controls and guests who (rightfully) rebel at being grifted on bottle pricing.
Possible solution: Colorfully decorated slushy machines illuminated from the bottom with blacklight (many food colorings are naturally florescent). There's plenty electrolyte drink syrups that can be used and with an extra dash of lemon you'll get something people will happily indulge in.
Am I missing something?

You can serve more people if you can serve it at a push and alcohol being highly taxed and branded cuts into the bottom line a lot.
